Tortellini with Sausage and Mascarpone
Description
This recipe features spicy crumbled Italian sausage browned until flavorful, then enhanced with minced garlic, sliced shallot, and red pepper flakes to build a savory base. A red sauce mixed with heavy cream and mascarpone cheese is added and simmered until smooth and saucy. The mascarpone adds a subtle creaminess and richness to the sauce.
Tortellini is cooked according to package instructions, then combined with the sauce and a bit of reserved pasta water to loosen the consistency for coating the pasta evenly. The dish is finished with fresh Parmesan cheese that adds a salty, nutty element and depth of flavor.
This warm, comforting dish works well as a satisfying main course for dinner and showcases a balance between spicy, creamy, and tangy flavors from the sauce components and sausage. Using fresh or quality tortellini enhances the texture and bite.
Notes advise sourcing fresh tortellini from an Italian market for optimal quality, although any filling is suitable. Season carefully to taste and serve immediately to preserve the sauce’s creaminess.
Ingredients
- 12 ounces Italian sausage spicy, crumbled
- 4 cloves garlic minced
- 1 shallot sliced
- 1 teaspoon red pepper flakes
- 2 cups of your favorite red sauce
- ¼ cup heavy cream
- ¼ cup mascarpone cheese
- 1 ounce tortellini package, refrigerated
- salt Kosher salt and freshly cracked, to taste
- black pepper Kosher salt and freshly cracked, to taste
- Parmesan Cheese freshly grated, to taste
Instructions
- Take the sausage meat out of the casings and crumble it into a skillet. Cook it over medium-high heat, stirring occasionally, until it's browned. Drain most of the fat and leave the sausage in the pan.
- Add the garlic, shallot, and red pepper flakes to the same pan and saute for 60 seconds. Add the red sauce, cream, and mascarpone. Cook for 5-7 minutes until saucy.
- Cook the tortellini according to the package directions. Save ¼ cup of the pasta water and add it to the sauce along with the drained pasta. Season with salt & pepper as needed and serve with fresh parmesan sprinkled over top.
Notes
- Buying fresh tortellini from local Italian markets will improve the dish’s texture and flavor but any tortellini filling works well.
- Adjust seasoning after combining sauce and pasta to balance the richness and spice.
- Serve immediately to enjoy the sauce’s creamy consistency.
