Tortilla Pizza
Description
This tortilla pizza starts by brushing olive oil onto a flour tortilla, then layering mozzarella cheese before covering with a second tortilla to create a sandwich. Baking on a hot sheet crisps the bottom tortilla, forming a firm base for the pizza. After flipping, the second side is brushed with oil, topped with pizza sauce, herbs, cheeses, and chosen toppings like pepperoni or mushrooms.
The dual tortilla method yields a thin, crispy crust with melted cheese sandwiching the base, adding a satisfying texture and flavor contrast. Using dried oregano or basil over sauce introduces a herbal aroma traditional for pizzas. Preheating the baking sheet ensures quick browning and prevents sogginess, while cooking moist toppings adjusts moisture content to keep the pizza crisp.
This dish serves as a quick and customizable pizza option ideal for casual meals or snacks. It pairs well with a salad or side dish to complete a meal. The instructions emphasize managing moisture in toppings to maintain crispness.
Ingredients
- 8 large flour tortillas
- 5 cups mozzarella cheese divided, shredded
- 2 tablespoons olive oil
- 1 cup pizza sauce
- ¼ cup Parmesan Cheese shredded
- 1 teaspoon oregano or basil, dried
- toppings as desired
Instructions
- Preheat the oven to 425°F. Place a baking sheet in the oven to preheat while the oven is warming up.
- Place one tortilla on a cutting board and brush it with olive oil. Flip it over and sprinkle ¼ cup of shredded mozzarella cheese on top. Place a second tortilla on top to form a tortilla "sandwich".
- Slide the tortilla from the cutting board onto the preheated baking sheet, oil side down. Bake for about 4 to 5 minutes, or until the bottom is golden brown.
- Remove the tortilla from the oven and brush oil on the second side. Flip the tortilla over so the browned side is facing up.
- Spread ¼ cup of pizza sauce on the browned side of the tortilla. Sprinkle ¼ teaspoon of dried oregano or basil over the sauce.
- Top with 1 cup of shredded mozzarella cheese and 1 tablespoon of shredded parmesan cheese. Add your favorite pizza toppings, such as pepperoni slices, sliced mushrooms, or any other desired toppings.
- Return the tortilla pizza to the oven and bake for an additional 4 to 5 minutes, or until the bottom is browned. If desired, broil the pizza for 1 minute.
Notes
- Ensure the baking sheet is hot before placing the tortilla for good browning.
- Cook mushrooms or other high-moisture toppings before adding to prevent sogginess.
- The tortilla side touching the pan browns most, so brush oil accordingly for even crispness.
