Tortillas de Harina are soft, thin flour tortillas made from a simple dough of flour, baking powder, salt, shortening, and hot water. They are rolled out to a thin circle and cooked on a hot griddle until bubbly and lightly browned, resulting in pliable wraps ideal for various fillings.

Description

These flour tortillas are made by mixing all-purpose flour, baking powder, and salt, then cutting in vegetable shortening until the mixture resembles coarse crumbs. Hot water is added gradually to form a soft dough. After kneading until smooth, the dough rests covered for at least 30 minutes, which relaxes the gluten and makes rolling easier.

The rested dough is divided into equal balls, each rolled into a thin circle about 8 inches wide on a lightly floured surface. The tortillas are cooked on a preheated griddle or comal over medium heat until bubbles form and the underside is golden, then flipped to cook the other side. The result is tender tortillas that are flexible and lightly charred.

These tortillas are perfect for burritos, tacos, quesadillas, or as a side with Mexican dishes. Their neutral flavor complements a variety of fillings and can be made in advance and stored wrapped to retain softness.

  • 1 teaspoon salt
  • 1/3 cup vegetable shortening
  • 3/4 cup water hot

Instructions

  1. In a large bowl, combine the flour, baking powder, and salt.
  2. Mix in the vegetable shortening until crumbly with no pieces larger than a pea.
  3. Slowly add the hot water to bring together a soft dough.
  4. On a very lightly floured surface, knead the dough until smooth.
  5. Cover and allow to rest at room temperature for at least 30 minutes and up to 2 hours.
  6. Divide the rested dough into 12 equal pieces. Roll each piece into a ball and cover with a towel.
  7. On a very lightly floured surface, roll a ball into a thin circle by gently rolling back and forth from the center without making it all the way to the edge. Turn the circle as needed while continuing this back and forth motion until about 8 inches (20 centimeters) wide. Repeat with remaining rounds of dough.
  8. Place a comal or large griddle over medium heat.
  9. Once fully heated, add a prepared circle of dough and cook until bubbles start to form on the surface and golden on the underside, about 20 seconds.
  10. Flip the circle and cook until golden with more bubbles, another 20 seconds.
  11. Flip and cook one last time until puffed, about 10 seconds.
  12. Transfer to a kitchen towel and cover to keep warm, repeating with remaining circles.
  13. Serve immediately or refrigerate for up to 3 days in an airtight container.
