													Toshikoshi soba noodle recipe for crossing over into the New year. Starting the new year with a clean slate by eating this delicious Toshikoshi soba.

                                Ingredients
Soup
- 480ml/2cup dashi stock *1
 - 30ml/2tbsp soy sauce
 - 30ml/2tbsp mirin *2
 
Soba Noodle
- 180g/6oz dry soba noodle
 - 2.6L/11cups water to cook soba noodle
 
Topping
- 2 tempura prawn *3
 - 4 lices Kamaboko fish cakes *4
 - 1 tbsp finely chopped scallions
 - 1/4 tsp Shichimi togarashi (Japanese seven spices) (optional)
 
Instructions
- Combine all soup ingredients into a saucepan over medium - high heat and bring to boil.
 - Turn the heat off and set aside.
 - Cook Soba noodle. Boil water in a large pot.
 - Add soba noodle and stir with chopsticks.
 - Cook for 4 minutes. *5
 - Drain the water and place the noodle into two separate noodle bowls.
 - Top with tempura prawn, kamaboko fish cakes, and scallion.
 - Pour the soup over the noodle and sprinkle Shichimi togarashi chilli powder as you like.
 
Notes
- *1 Dashi stock - make from scratch see here
 - Or use 1tsp of Dashi Powder with No MSG to the same amount of water of the recipe.
 - *2 If you can not access to Mirin, substitute with 2 tbsp of dry sherry with 1 tsp of caster sugar.

 - I made three. One for me and Two for my son.
 - *4 optional. If you can not get kamaboko, you can substitute with anything you want, such as chicken, boiled eggs, tofu etc.
