  • 1 cup flour
  • 1 butter softened, stick
  • 1/4 cup powdered sugar
  • 2 egg large
  • 1 cup sugar
  • 2 tablespoons flour
  • 1/2 teaspoon baking powder
  • 3 tablespoons lemon juice
  • 1 teaspoon lemon grated peel
  • powdered sugar additional

Instructions

  1. Preheat the oven to 350 degrees.
  2. Add the flour, butter and powdered sugar together in a food processor.
  3. Pulse until combined in a ball.
  4. Pat down into an 8 inch square baking pan.
  5. Bake for 18 minutes.
  6. To a medium sized bowl add the eggs, sugar, flour, baking powder, lemon juice and lemon peel.
  7. Whisk until frothy with either a whisk or a hand held mixer, about 2 minutes.
  8. Add to the crust and bake for 22 minutes.
  9. Let cool completely, cut into 1 inch squares and dust with more powdered sugar.
