Traditional Alfredo Pasta uses simple ingredients: fettuccine pasta cooked al dente, Parmesan cheese, butter, and black pepper. The cooking method involves whisking butter and Parmesan with reserved hot pasta water to create a creamy, emulsified sauce. Adding the cooked pasta to the sauce and tossing it on low heat ensures even coating and prevents curdling.

The flavor is delicate yet rich, with the sharpness of Parmesan balanced by the butter's creaminess, enhanced by black pepper. The texture is silky without heaviness, allowing the fettuccine’s chewiness to stand out.

Serve immediately to enjoy the sauce in its best state. Leftover pasta can be refrigerated and reheated gently on the stovetop with a splash of water and extra Parmesan to restore creaminess.

  • 1 cup Parmesan Cheese divided, freshly grated
  • ½ cup butter (divided)
  • 2 cups pasta I used fettuccine, long
  • 2-3 dashes black pepper to taste

Instructions

  1. In a large pot of boiling salted water cook the fettuccine al dente.
  2. in a medium pan add ½ the butter, ¼ cup Parmesan cheese and approximately 3-5 tablespoons of hot pasta water. On low medium heat, whisk together to make a cream.
  3. Add the drained pasta, another 3-5 tablespoons of hot pasta water or a little more if needed, the remaining butter and parmesan cheese, gently toss together on low heat (for about 1 minute) and serve immediately, sprinkle with parmesan cheese and black pepper.  Enjoy!

Notes

  • Use about 4 ounces (113 grams) of dry pasta to yield 2 cups cooked.
  • Store leftovers in an airtight container in the refrigerator for up to a few days.
  • Reheat slowly on the stovetop with added water and Parmesan cheese to revive the sauce’s texture.
