Anzac biscuits or cookies are the traditional Australian and New Zealand breakfast biscuit also known as golden oatmeal cookies. This traditional Anzac biscuits recipe is easy and quick to prepare, they’re crunchy and chewy, packed with oats, and taste so buttery with delicious coconut and hints of caramel from the caramelized sugar. You and your family will fall in love with these New Zealand and Australian Anzac cookies.

Ingredients
- 1 cup all purpose flour 120 grams
- 1 cup rolled oats 90 grams
- 1/4 teaspoon salt 1.2 grams
- 1/2 teaspoon baking soda 2.5 grams
- 1 cup graulated sugar 200 grams
- 1 cup desiccated coconut 90 grams
- 2 tablespoons golden syrup or honey 40 grams
- 1/2 cup unsalted butter 125 grams
- 2 tablespoons boiling water 30 grams
Instructions
- Preheat oven to 175°C (350°F), and line 2 baking pans with parchment paper.
- In a large bowl combine the oats, flour, salt, brown and granulated sugar, and coconut and stir together.
- Over medium-low heat combine the butter and golden syrup or honey and cook just until the butter melts stirring as needed, about 3 minutes. Turn off the heat and allow it to cool for 5 minutes.
- Mix the boiling water with the baking soda in a small bowl.
- Add both liquid mixtures to the flour mixture and mix using a spatula until the cookie batter comes together. Do not overmix.
- Drop or roll 2 tablespoonfuls of cookie batter into balls and place onto lined baking trays, leaving about 1-inch space between them.
- Bake in preheated oven for 15-16 minutes, then remove from the oven and allow the cookies to cool on the baking tray.
