Traditional Czech Řízek
Description
The Traditional Czech Řízek recipe focuses on pork shoulder slices that are no thicker than half an inch and lightly tenderized to ensure tenderness after frying. The pork is salted, then coated sequentially in flour, beaten eggs, and breadcrumbs, with excess coating gently shaken off to avoid clumps. Pan-fried in a generous layer of fat for 3 to 4 minutes on each side, the tenderized pork develops a golden, crisp exterior that contrasts with the juicy meat inside.
The finished Řízek pairs well with simple boiled potatoes or creamy mashed potatoes, allowing the rich flavors of the breaded pork to take center stage. Optional lemon wedges complement the dish by adding brightness when squeezed over the cutlets just before eating.
This recipe typically yields 4 to 6 schnitzels. The method highlights careful preparation of the breading and frying process to achieve a balanced texture and flavor, reflecting a traditional Czech approach to pork Řízek.
Ingredients
- 1 pound pork shoulder
- 1 cup breadcrumbs
- 2 egg
- ⅓ cup all-purpose flour
- 1 teaspoon salt
- canola oil or lard
- lemon to garnish - optional, slices
Instructions
- Cut 1 pound pork shoulder into slices no more than ½-inch thick.
- Put the slices on a chopping board and lightly pound each side with a tenderizer.
- Salt the pork on both sides.
Coating:
- Crack 2 eggs into a bowl and beat them with a fork (no blender). Salt the eggs lightly.
- Pour ⅓ cup all-purpose flour into a shallow bowl. Put 1 cup breadcrumbs in another separate bowl.
- Coat each slice of meat in the following order: Firstly in the flour, then in beaten eggs, and finally in breadcrumbs. After dredging the meat in flour and breadcrumbs, shake off the excess coating.
Frying:
- Heat up a thick layer of fat in a frying pan.
- Fry the coated Řízky until they turn golden brown. Each side should take 3 to 4 minutes.
- Serve with boiled potatoes or potato mash. Garnish with a sprig of parsley and a wedge of lemon (optional).
Notes
- This recipe yields about 4 to 6 pork Řízek slices, suitable for a small group.
- Serve the Řízek hot with a squeeze of lemon juice to enhance the flavor.
