  • 1 pound pork shoulder
  • 1 cup breadcrumbs
  • 2 egg
  • cup all-purpose flour
  • 1 teaspoon salt
  • canola oil or lard
  • lemon to garnish - optional, slices

Instructions

  1. Cut 1 pound pork shoulder into slices no more than ½-inch thick.
  2. Put the slices on a chopping board and lightly pound each side with a tenderizer.
  3. Salt the pork on both sides.

Coating:

  1. Crack 2 eggs into a bowl and beat them with a fork (no blender). Salt the eggs lightly.
  2. Pour ⅓ cup all-purpose flour into a shallow bowl. Put 1 cup breadcrumbs in another separate bowl.
  3. Coat each slice of meat in the following order: Firstly in the flour, then in beaten eggs, and finally in breadcrumbs. After dredging the meat in flour and breadcrumbs, shake off the excess coating.

Frying:

  1. Heat up a thick layer of fat in a frying pan.
  2. Fry the coated Řízky until they turn golden brown. Each side should take 3 to 4 minutes.
  3. Serve with boiled potatoes or potato mash. Garnish with a sprig of parsley and a wedge of lemon (optional).
