  • 4 Roma tomato cut into chunks
  • 1 cup kalamata olives cut in half
  • 1/2 red onion thinly sliced
  • 3 cucumber cut into chunks, Persian
  • 1 green bell pepper cut into rings
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp oregano
  • 1/8 cup olive oil extra virgin
  • 8 oz feta cheese sliced, creamy

Instructions

  1. Place tomatoes, kalamata olives, red onion, Persian cucumbers and green bell pepper in a large bowl. 
  2. Add salt, pepper and oregano to the vegetables and mix well. 
  3. Add the olive oil and toss all the vegetables. Add more olive oil if needed. 
  4. Transfer the salad into a serving plate and top with chunks of feta cheese. 
  5. Serve immediately or cold. 

Notes

  • Feta cheese should be sliced and placed atop the salad, not crumbled, to preserve traditional texture.
  • Use high-quality, fresh ingredients to highlight the salad’s simplicity.
  • If Persian or mini cucumbers are unavailable, English cucumbers may be used after removing the seeds.
