Traditional Pumpkin Pie

Traditional Pumpkin Pie features a smooth pumpkin filling blended with evaporated milk, eggs, and warm spices like cinnamon, ginger, nutmeg, cloves, and a touch of salt, all baked in a flaky pie crust. The spiced custard is creamy with a balanced sweetness, finished with whipped cream flavored with vanilla or alternatives for added richness and texture.

Description

This pumpkin pie recipe uses pumpkin puree combined with evaporated milk, eggs, sugar, and a blend of traditional autumn spices for a classic custard filling. The smooth mixture is poured into an unbaked pie crust and baked initially at high heat for a short period to set the filling edges, then at a lower temperature to gently cook through without cracking. A clean toothpick test confirms doneness.

The spices—cinnamon, ginger, nutmeg, cloves, and salt—are selected to complement the earthiness of the pumpkin and add warmth. After baking and cooling, the pie is topped with whipped cream that is beaten to stiff peaks, sweetened, and flavored with vanilla or other extracts such as almond or amaretto, creating a light contrast to the dense filling.

This pie works well for holiday meals or any occasion needing a traditional dessert with balanced spice and a creamy texture. The crust adds a crisp, buttery contrast to the smooth pumpkin center, providing the classic pie experience.

Consider garnishing the pie with chopped nuts or a drizzle of honey on the whipped topping for additional texture and sweetness if desired.

Ingredients

Servings
  • 1 pie crust click the link for our Perfect Pie Crust Recipe, unbaked

For the filling:

  • 15 ounces pumpkin puree
  • 12 ounces evaporated milk
  • 3/4 cup sugar
  • 2 egg
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/4 teaspoon cloves

For the whipped topping:

  • 1 pint whipping cream
  • ¼ cup sugar
  • 2 teaspoons vanilla extract or almond or amaretto flavoring

Instructions

For the filling:

  1. Crack the eggs into a large bowl and stir until blended (I like to use a wire whisk). Then add the sugar and spices and stir again.
  2. Blend in the pumpkin and gradually stir in the evaporated milk.
  3. Pour the pumpkin mix into the unbaked pie crust and bake for 15 min at 425 degrees, then turn the oven down to 350 degrees and bake for 40 to 50 more minutes or until a toothpick in the center comes out clean.
  4. Remove from oven and cool completely before cutting.

For the whipped topping:

  1. Beat the whipped topping ingredients until stiff peaks form. Spoon onto cooled pie and sprinkle with cinnamon.

Notes

  • Top the pie with homemade whipped cream for best texture and flavor.
  • Adding a drizzle of honey or chopped nuts like walnuts, pecans, or peanuts enhances flavor and texture.
  • A dash of cinnamon on the whipped cream adds a finishing spice note.
