Traditional Yorkshire Pudding Recipe
Description
The Traditional Yorkshire Pudding Recipe combines a simple batter of eggs, whole milk, all-purpose flour, and salt, with beef drippings as the cooking fat. After mixing and resting the batter, it is poured into muffin tins preheated with the hot fat to ensure a sizzling start. The high initial temperature of 400°F promotes a dramatic rise, resulting in puffed puddings with a crisp, golden crust and soft interiors. Reducing the oven temperature to 350°F after 5 minutes continues the cooking without burning.
The flavor comes from the subtle richness of the beef drippings, which adds depth beyond basic oil. Texture is key, with a balance of lightness and crispiness that supports absorbing gravy or sauces. Yorkshire pudding is traditionally served as a side with roast beef dinners or alongside gravy-based dishes, providing a versatile and comforting complement.
The notes suggest using beef drippings from a roast beef when available, as this enhances authenticity and flavor. Resting the batter before baking helps the flour absorb liquid fully, improving its rise. For those without beef drippings, vegetable oil can be used, though the texture and flavor may vary slightly.
