Tri Tip Steak Recipe

This Tri Tip Steak is marinated in a flavorful mixture of olive oil, soy sauce, lime juice, garlic, and optional Chinese five spice and Sriracha, then grilled to medium doneness. It’s served sliced across the grain with a drizzle of teriyaki sauce and a spicy mayo blend made from mayonnaise, Sriracha, and lime juice. The marinade imparts savory, tangy, and mildly spicy notes while the sauces complement the grilled meat’s texture and flavor.

Description

The marinating process coats the tri-tip steak in a balanced mix of soy sauce, olive oil, lime juice, garlic, and spices, which tenderizes and infuses it with umami and bright citrus tones. After marinating for 20-30 minutes, the steak is grilled over high heat briefly to develop a seared crust, then cooked over medium heat until the internal temperature reaches 145°F for a medium doneness. Resting the steak for five minutes allows juices to redistribute.

Meanwhile, a sauce combining mayonnaise, Sriracha, and lime juice is whisked to a pourable consistency, offering creaminess with a spicy, tangy kick. The grilled steak is sliced thinly across the grain to maximize tenderness and drizzled with the teriyaki sauce and spicy mayo, enhancing the layered flavors. The dish is ready to serve immediately after resting for best texture.

Homemade teriyaki sauce without unusual ingredients can be prepared separately and stored for future use. The spicy mayo sauce can be adjusted with lime juice or water to achieve desired consistency and heat level. Grilling provides a flavorful char and keeps the steak juicy inside.

Ingredients

Servings
  • 1 ½ pounds tri-tip steak
  • cup teriyaki sauce see note
  • cup mayonnaise
  • 1 tablespoon Sriracha sauce or garlic chili sauce
  • 1 tablespoon lime juice more as needed/to taste

Marinade

  • ¼ cup olive oil
  • ¼ cup soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon garlic minced
  • 2 teaspoons Chinese five spice seasoning optional
  • 2 teaspoons Sriracha sauce

Instructions

  1. Combine all marinade ingredients in a medium bowl and whisk well. Add Tri-Tip Steak, toss to coat, and cover. Let marinate for 20-30 minutes.
  2. Stir together mayo and sriracha sauce. Add lime juice and stir. Sauce should be a good consistency for drizzling. If not, add more lime juice or a few teaspoons of water as needed to thin it out.
  3. Use tongs to transfer the marinated Tri-Tip to a grill preheated to high. (Discard marinade). Sear on each side about 2 minutes to get a good sear/grill lines. Reduce heat to medium and continue to cook 8-10 minutes until internal temperature reads 145 degrees F.
  4. Remove from grill, allow to rest about 5 minutes. Slice across the grain, then drizzle with teriyaki sauce and spicy mayo. Serve immediately.

Notes

  • The homemade teriyaki sauce is quick to make and can be prepared in advance; store extras in the fridge or freezer.
  • Adjust the spicy mayo consistency by adding lime juice or water as needed to make it easy to drizzle.
  • Rest the steak for several minutes after grilling to keep it juicy before slicing across the grain.
