Triple Nut Biscotti
Description
Triple Nut Biscotti start by roasting skinned almonds, shelled pistachios, and walnuts to bring out their flavor and crunch before folding them into a rich dough made from eggs, sugar, flour, honey, vanilla, lemon zest, salt, and baking powder. The lemon zest imparts a subtle brightness contrasting nicely with the nuts and honey's sweetness.
After mixing, the dough is divided into three logs, brushed with an egg wash for color and texture, then baked. Once slightly firm, the logs are sliced on the diagonal and baked again to develop their signature hard, dry, and crunchy texture typical of biscotti.
These biscotti are perfect for serving alongside coffee or tea, where their crispness softens slightly when dunked. Their mix of three nuts creates a layered nutty flavor profile making them distinctive and satisfying.
