Tropical Fruit Salad

Ingredients

  • juice of 1 lime (about 1 tablespoon)
  • 1 tablespoon honey
  • 1/4 teaspoon cinnamon
  • 1 cup chopped pineapple
  • 1 cup sliced strawberries
  • 2-3 kiwis peeled and sliced (about 1 cup)
  • 2 clementines peeled and segmented
  • 1 Mango peeled and diced (about 3/4 cup)
  • 1 banana sliced
  • 1/4 cup shredded sweetened coconut

Instructions

  1. Place the lime juice, honey, and cinnamon in a large bowl and mix until combined.
  2. Add the pineapple, strawberries, kiwis, clementines, mango, banana, and coconut. Mix gently to combine.
  3. Serve right away, or refrigerate until ready to serve. Top with additional coconut, if desired.

Notes

  • This is best served right away. The bananas will start to brown if you make it ahead of time.
  • You can use any mixture of fruit that you’d like. You just need approximately 5-6 cups of fruit.
