Tropical Steak Tacos
Description
These tacos feature flank steak seasoned simply with fine sea salt and black pepper, then seared or grilled to medium rare for a juicy, tender texture. The tortillas are warmed and lightly basted with a turmeric and cumin-infused oil, adding an earthy undertone and subtle spice.
Topping each tortilla with a crisp leaf of bibb lettuce, salsa made from sweet mango, crunchy shredded red cabbage, and crumbly queso fresco creates a mix of cool freshness and creamy contrast to the warm, spiced steak strips. The variety of fresh components lightens the richness of the meat.
Serving these tacos makes for a colorful meal that balances bold seasonings with tropical sweetness and crisp textures. They are suitable for casual dinners or gatherings where handheld foods are preferred.
Ingredients
- 8 tortillas corn or flour, soft
- 2 tablespoons vegetable oil
- 2 teaspoons Turmeric
- cumin sprinkle
- 1 flank steak
- sea salt fine sea salt and freshly ground pepper
- black pepper fine sea salt and freshly ground pepper
- 8 pieces bibb lettuce
- 1 cup mango salsa
- 1 cup red cabbage shredded
- 1/2 cup queso fresco crumbled
Instructions
- Preheat the oven to 300°F. Wrap the tortillas in aluminum foil. Set aside.
- In a small bowl, whisk together the vegetable oil, turmeric and cumin. Set aside.
- Trim the steak of any large pieces of fat. Season well with the fine sea salt and freshly ground pepper. You can either grill your steak or cook it on the stovetop. For stove top, heat a large, seasoned cast iron skillet over high heat until almost smoking. Place in pan, searing on each side for 3-4 minutes for medium rare. For grilling, preheat grill to medium-high and grill on direct heat for 3-4 minutes on each side.
- Remove and allow the steak to rest for 5 minutes. Thinly slice against the grain into 1/2 inch thick strips.
- Meanwhile, heat the tortillas in the oven for 5 minutes. Remove and baste each on just one side with the oil and spice mixture.
- To assemble, place a leaf of Bibb lettuce over the side of tortilla that was basted. Top with 2-3 slices of the beef, 1 tablespoon of mango salsa, a generous pinch of red cabbage and sprinkle of queso fresco.
