An elevated tuna salad using sweet corn and green beans with a mayo based dressing.

Ingredients

Servings

Dressing

  • 2 teaspoon Greek yogurt
  • ½ cup mayonnaise
  • 1 lime juiced
  • ½ cup Parmesan Cheese grated or any other sharp cheese
  • 2 teaspoon olive oil
  • ½ teaspoon black pepper cracked
  • ½ teaspoon smoked paprika

  • 6 oz tuna solid white albacore if possible, can
  • 1 cup sweet corn thawed, frozen
  • ½ cup green beans thawed and diced, frozen
  • 2 green onion sliced thinly
  • ½ cup cilantro sliced

Instructions

  1. In a large serving bowl, Mix together all of the dressing ingredients until well combined.
  2. Then, flake the canned tuna directly into the bowl (unless you have pre-flaked tuna). Add the thawed corn and green beans, green onions, and cilantro to the bowl and toss well.
  3. Serve with a pinch of paprika on top.
