Tuna Crudo

Tuna Crudo is a simple raw tuna preparation sliced about a quarter inch thick and dressed with olive oil, lemon juice and zest, sea salt, and capers. The ingredients highlight the fresh tuna’s texture and mild flavor, while the acidic and salty elements add brightness and balance. This elegant, no-cook dish showcases clean, pure flavors and requires minimal seasoning and prompt serving.

Description

The Tuna Crudo recipe involves thinly slicing sushi-grade tuna to about 1/4 inch thickness using a sharp knife to ensure clean cuts and preserve texture. The slices are arranged on a plate and lightly seasoned with sea salt, extra-virgin olive oil, freshly squeezed lemon juice, lemon zest, and a tablespoon of capers. The combination brightens the delicate raw tuna and introduces salty and citrus notes that enhance its natural flavor.

The method is quick, focusing on fresh, high-quality ingredients and minimal handling to maintain the tuna’s tenderness and clean taste. The dressing components complement but do not overpower the fish, making it ideal as a light appetizer or first course.

This dish pairs well with dry white wine or a crisp rosé that matches its fresh, clean profile. While not typically paired with beer, a pilsner can be a complementary alternative.

Ingredients

Servings
  • 1/2 pound tuna sushi grade
  • 1/4 cup extra-virgin olive oil
  • lemon juice and zest
  • salt sea salt
  • 1 tablespoon capers

Instructions

  1. Slice the tuna thin, but not too thin. Shoot for about 1/4 inch thick. A tip on cutting cleanly: Draw your (very sharp) knife back towards you to cut, so you only slice in one direction. Sawing through fish makes it raggedy.
  2. Arrange the fish on a plate or plates, and distribute the oil, lemon juice, capers, salt and lemon zest around it. Serve immediately,

Notes

  • Use very fresh, sushi-grade tuna and slice it about 1/4 inch thick using a sharp knife for clean edges.
  • Serve immediately after dressing to keep the tuna texture tender and fresh.
  • Pair with a very dry white wine or dry rosé; a crisp pilsner beer can also complement this dish.
