  • 200 g tuna canned
  • 50 g sweetcorn
  • 1 onion
  • 100 g mayonnaise
  • tortilla
  • mozzarella cheese

Instructions

  1. In a bowl add the canned tuna, finely diced red onion, sweetcorn, and mayonnaise then mix until all the ingredients are evenly combined
  2. Drizzle olive oil onto a griddle pan and brush the oil over the pan
  3. Add a flour tortilla and top with mozzarella cheese and the tuna mixture
  4. Top with more cheese and finish with a flour tortilla on top
  5. Brush the top of the tortilla with some oil
  6. Allow the quesadilla to cook for 2-3 minutes on medium heat until the bottom side is lightly browned
  7. Flip over and allow to cook for a further 2-3 minutes until lightly browned
  8. Cut the quesadillas into slices and enjoy warm!
