Description
This Turkey Chilli marries lean turkey mince browned with a mix of diced onion, bell pepper, carrot, and sweet potato, creating a substantial vegetable base. The spice blend includes chili powder, ground cumin, oregano, smoked paprika, and minced chipotle peppers in adobo, providing layers of warmth and smoky heat. Including canned chopped tomatoes, tomato puree, kidney beans, and sweetcorn adds texture and variety to the stew.
The chili is simmered in vegetable stock to meld flavors and achieve a stew-like consistency with tender vegetables and meat. The finished dish offers a balance between the earthiness of beans and vegetables and the heat and smokiness from the chili spices and chipotle. It can be garnished with sour cream, sliced jalapeños, fresh cilantro, grated cheddar, and a squeeze of lime for brightness.
This chili works well served on its own or alongside rice or a baked potato, making it versatile for meals. It also allows ingredient swaps such as different meats or vegetarian alternatives and accepts additions like dark chocolate or cinnamon for depth. Ingredients
- 500 g Turkey mince
- 1 onion diced
- 1 red bell pepper diced
- 1 carrot diced
- 1 sweet potato peeled and diced
- 3 garlic crushed, clove
- 400 g tomato canned, chopped
- 400 g Kidney Beans canned; drained
- 150 g sweetcorn
- 1 tablespoon olive oil
- 2 tablespoon tomato puree
- 2 tablespoon chilli powder
- 1 teaspoon cumin ground
- 1 teaspoon oregano dried
- 1 teaspoon smoked paprika
- 1 tablespoon chipotle peppers en adobo
- 1 pinch sea salt
- 1 pinch black pepper
- 125 ml vegetable stock
To serve:
- sour cream
- jalapeños sliced
- cilantro chopped, fresh
- cheddar cheese grated
- lime quartered
- tortilla chips
Instructions
- Prepare 1 Onion, 1 Red bell pepper, 1 Carrot and 1 Sweet potato by cutting them into 2cm/1 inch cubes
- Heat 1 tablespoon Olive oil in a large pan and add the vegetables. Cook for 5 minutes.
- Add 500 g Turkey mince, breaking it up as it cooks. Cook until all the mince has browned (about 5 minutes)
- Add 3 Garlic clove, 2 tablespoon Chilli powder, 1 teaspoon Ground cumin, 1 teaspoon Dried oregano, 1 teaspoon Smoked paprika and 1 pinch Sea salt and ground black pepper. Mix well.
- Add 400 g Chopped tomatoes, 150 g Sweetcorn, 400 g Kidney beans, 2 tablespoon Tomato pureeLimes and 1 tablespoon Chipotle en adobo. Stir until all mixed.
- Add 125 ml Vegetable stock and simmer for 15 minutes.
- Serve with Tortilla chips, Sour cream, grated Cheddar cheeseFresh coriander (cilantro) and sliced Jalapeños (all optional).
Notes
- Substitute turkey mince with beef, chicken, or vegetarian protein as preferred.
- Adding dark chocolate and cinnamon can deepen chili flavor.
- Extra vegetables like butternut squash, spinach, or kale may be included for more nutrients.
- Serve chili by itself or with rice or baked potatoes.
- Brown turkey and vegetables the day before to speed up cooking when ready to serve.
