Description

This recipe mixes 93% lean ground turkey with breadcrumbs to bind, egg for moisture, fresh or dried basil and oregano for aromatic seasoning, finely chopped onion for texture and flavor, minced garlic, and simple salt and pepper. After combining, meatballs are formed by hand or with a scoop and placed on a parchment-lined baking sheet. Baking at 375°F for 25-30 minutes cooks them thoroughly to an internal temperature of 165°F.

The turkey meatballs have a tender texture that can be enjoyed on their own, served with marinara sauce over pasta, or as finger food.   • 1 lb. ground turkey 93% lean
  • 1/3 cup breadcrumbs panko or regular
  • 1 egg
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper freshly-ground
  • ¾ teaspoon basil or 1 ½ teaspoons minced fresh basil, dried
  • 1 ¼ teaspoon oregano or 2 ½ teaspoons minced fresh oregano, dried
  • 1 onion about 1 ½ cups chopped or 200g, medium
  • 1 garlic minced, clove

Instructions

  1. Preheat the oven to 375°F.
  2. Line a baking sheet with a nonstick baking mat or parchment paper. Set aside. (You can also place a cooling rack on top of the baking sheet to prevent the meatballs from sitting in their juices, if you'd like to do this. I used to, but the clean up of the cooling rack makes me crazy, so I forgo it now.)
  3. In a large bowl, measure out the turkey, breadcrumbs, egg, seasonings, onion and garlic.
  4. Use your hands to mix the ingredients until incorporated.
  5. Once the meatball ingredients are combined, form palm-sized meatballs (with your hands or with a cookie scoop) and place them on the prepared baking sheet.
  6. Bake the meatballs for 25-30 minutes or until cooked to an internal temperature of 165°F.
  7. Toss with your favorite marinara sauce and serve with pasta or serve alongside it as an easy appetizer.

Notes

  • For larger meatballs, increase baking time accordingly and expect fewer servings.
