Turkey Meatloaf with Zucchini
Description
This meatloaf uses ground turkey mixed with grated zucchini that has been squeezed dry to prevent excess moisture. Dried onion flakes and oats or seasoned breadcrumbs provide structure and flavor, while an egg binds the mixture together. Marjoram and kosher salt season the meat. The mixture is shaped into a loaf and placed on a baking sheet.
A topping made from ketchup and Worcestershire sauce is spooned over the meatloaf before baking. The loaf is baked uncovered at 350°F for 55 to 60 minutes until cooked through, then rested for 5 minutes before slicing to retain juices.
The combination of zucchini and oats keeps the meatloaf moist and tender despite the leanness of the turkey. This recipe provides a balanced, flavorful dish suitable for families seeking a lighter meatloaf option.
