Description

This Turkey Mince Bolognese builds flavor by first frying chopped onion until golden, then browning minced turkey to develop a hearty base. Garlic and carrot add sweetness and aroma. Chicken stock is added and cooked down to concentrate flavor before incorporating tinned tomatoes and tomato puree. The sauce is simmered until thickened, then seasoned with salt, pepper, and Italian herbs for an herbaceous note. Ingredients

  • 250 g spaghetti (½ lb)
  • 500 g ground turkey 1 lb, lean
  • 1 carrot
  • 450 ml chicken stock
  • 1 tin tomato 400 g, chopped
  • 1 tablespoon tomato puree
  • ½ teaspoon salt
  • ¼ teaspoon black pepper ground
  • 2 tablespoon sunflower oil
  • 2 garlic cloves
  • parsley for garnish
  • 1 teaspoon italian herbs

Instructions

  1. Cook the spaghetti according to the packet instructions.
  2. Peel and chop the onion, carrot and garlic.
  3. Heat up the oil in a large pan, add the chopped onion and fry until golden.
  4. Add the minced turkey and stir well with a wooden spoon, breaking any lumps that may form.
  5. Continue to stir until the mince is brown all over, that should take about 10-15 minutes..
  6. Add the chopped garlic, carrots, chicken stock and leave to cook on a medium to high heat until all the liquid has been absorbed, it may take up to 15 minutes.
  7. Add the tinned tomatoes and tomato puree and leave to cook for 10 minutes, stirring occasionally.
  8. Season with salt and pepper, add the Italian herbs, then remove from the heat and garnish with freshly-chopped parsley.

Notes

  • Measurements can be adjusted to cups and ounces using the US Customary link for convenience.
  • You can change the number of servings to scale ingredient quantities accordingly.
