Turkey Quinoa Stuffed Peppers

Delicious, low fat and satisfying, these Turkey Quinoa Stuffed Peppers are made with a tomato sauce. Easy to make and kid friendly. Try this recipe!

Ingredients

Servings

For Stuffed Peppers

  • 1 lb. ground turkey breast
  • 1 cup quinoa uncooked
  • 1 egg
  • 1 teaspoon Italian seasoning
  • 4 whole pepper
  • salt to taste
  • black pepper to taste

For Sauce

  • 1 teaspoon olive oil
  • 1/2 medium onion chopped
  • 1 diced tomatoes or 4 fresh tomatoes diced, canned
  • 3 tablespoons ketchup
  • salt to taste
  • black pepper to taste

Instructions

For Sauce

  1. In a skillet over medium heat, place the oil. Sautee the onions until translucent (4-5 minutes). Add the tomato and cook until softened (5 minutes). Mix in the ketchup, salt and pepper and cook for 2-3 minutes

For Filling

  1. Preheat Oven to 350 degrees Fahrenheit
  2. Cut the top off the peppers and remove the seeds inside. Save the tops
  3. In a bowl, combine the Quinoa, Turkey, Egg, Italian Seasoning, Salt and Pepper and add about 1/2 cup to 1 cup of the sauce. Mix until combined

Assembly

  1. Pour the sauce in the bottom of the baking dish
  2. Place the stuffed peppers on top
  3. Bake for 30-45 minutes or until the turkey and quinoa are cooked. Top with the sauce
  4. Enjoy!
