  • 1 gram turkey breast box, strips, Lilydale brand
  • 6 corn tortillas
  • 1 Mango chopped
  • 1 red bell pepper chopped
  • cup red onion diced
  • 1 jalapeño diced
  • 1 lime juice of
  • 2 tablespoon cilantro chopped
  • lime wedges, for serving

Instructions

  1. Preheat oven to 425°
  2. Arrange frozen turkey breast strips on a baking sheet.
  3. Cook 10 minutes, flip, then cook another 10 minutes
  4. Warm tortillas, wrapped in foil, in the oven during the last 5 minutes
  5. Toss together the mango, bell pepper, jalapeno, red onion, cilantro, and lime juice.
  6. Remove turkey and tortillas from the oven
  7. Assemble the tacos by dividing the salsa evenly over the tortillas, then the turkey strips.
  8. Serve with lime wedges.

Notes

  • Small flour tortillas can be used as an alternative to corn tortillas.
  • Parsley is a suitable substitute for cilantro in the mango salsa.
  • If fresh mango is unavailable, thawed frozen mango works well.
