Turkey Tostadas with Pomegranate Guacamole

Pomegranate Guacamole

  • 4 avocado
  • 1 serrano chili minced
  • ½ cup pomegranate seeds
  • 1 tomato diced - app ½ cup, small
  • ¼ cup cilantro chopped, fresh
  • 1 tbsp lime juice
  • 1 tbsp orange juice
  • 1 tsp kosher salt

Turkey Tostadas

  • 2 cups turkey chopped, cooked
  • 1 cup salsa
  • 2 cups refried black beans
  • 4 tostada shells
  • ¼ cup queso fresco

Instructions

Pomegranate Guacamole

  1. Add the avocados to a large bowl and mash.
  2. Add the remaining ingredients to the guacamole and stir to combine, place in the refrigerator.

Turkey Tostadas

  1. In a large skillet over medium heat, add the turkey and salsa, sauté 5-7 minutes.
  2. In a small saucepan over low-medium heat, add the refried black beans and heat through, 3-5 minutes.
  3. Spread the black beans on the tostada shells.
  4. Top with the turkey and the pomegranate guacamole, sprinkle the queso fresco over the top.
