Turkey Zucchini Boats

Turkey Zucchini Boats are hollowed zucchini halves filled with a savory mixture of ground lean turkey, chopped onion, and marinara sauce, topped with optional Parmesan cheese and baked until tender. The dish balances light zucchini with a hearty, sauced turkey filling offering both texture and flavor. Baking covered helps meld the ingredients and melt the cheese, resulting in a warm, satisfying main course.

Description

Turkey Zucchini Boats prepare zucchini cut lengthwise, seeded hollow, and filled with a cooked mixture of ground lean turkey and diced onion seasoned with salt and pepper, then mixed with marinara sauce. The boats are topped with Parmesan cheese if desired before being baked covered at 400°F until heated through and the zucchini tender.

The filling’s moist marinara sauce keeps the turkey mixture flavorful and juicy, contrasting with the zucchini’s mild bite. Optional cheese adds richness and a slight crust after melting. The baking ensures the zucchini softens without losing shape.

This meal can be customized by substituting ground turkey with ground chicken, beef, or sausage. Different cheese types or added vegetables can adjust taste and texture. It serves well as a low-carb, protein-rich dinner option.

Additional preparation tips include soaking in extras with the onion for softening, and swapping cheeses to suit preferences or diets. The recipe suits those aiming for a lean, vegetable-based stuffed dish with familiar flavors.

Ingredients

Servings
  • 4 medium zucchini
  • ½ medium onion chopped
  • 1 lb ground lean turkey
  • 1 ½ cup marinara sauce
  • 2-3 Tablespoons Parmesan Cheese optional

Instructions

  1. Preheat oven to 400° F.
  2. Place a large nonstick skillet over medium-high heat. Add the onion and ground turkey into the skillet. Season with salt and pepper. Cook for 8 to 10 minutes, breaking apart with a wooden spoon or spatula while it cooks.
  3. Add the marinara sauce to the turkey mixture. Stir to fully coat the turkey mixture with the sauce and cook for an additional 2-3 minutes.
  4. Meanwhile, as the turkey cooks cut the zucchini in half, lengthwise. Use a spoon to scoop the seeds and center out of each zucchini half, leaving about ¼ inch thick zucchini boat.
  5. Place the zucchini (cut-side up) in a 9x13 baking dish. Spoon the turkey mixture into the four zucchini boats. Sprinkle each boat with a little parmesan cheese, if desired.
  6. Cover the baking dish with foil. Bake for 20-30 minutes or until boats are heated throughout and cheese has melted. Serve immediately while warm.

Notes

  • Ground turkey can be swapped with chicken, beef, Italian sausage, or crumbled tempeh for variation.
  • Marinara sauce can be replaced with pesto or preferred pasta sauces.
  • Optional cheese topping may be Parmesan, mozzarella, cheddar, feta, or dairy-free alternatives.
  • Additional vegetables can be sautéed with onion before mixing to enhance filling.
