Description
The bottom layer consists of a mixture of flour, brown sugar, and room-temperature butter pressed firmly into a pan, forming the crust. Whole pecan halves are arranged evenly on top to add texture and a nutty flavor. The caramel layer is made by cooking butter and brown sugar until it rapidly boils but does not burn, then poured evenly over the pecans and crust.
Baking the layered pan at 350°F until the crust turns light golden brown sets the bars. Immediately sprinkling with milk chocolate chips after removing from the oven allows the chips to melt from residual heat. Spreading the melted chocolate creates a smooth, sweet topping that contrasts with the caramel and nutty crust.
The bars yield about three to four dozen pieces, good for sharing or gatherings. The combination of crunchy pecans, buttery crust, gooey caramel, and creamy chocolate evokes a classic turtle candy flavor in bar cookie form.
Ingredients
Bottom layer:
- 2 cups flour
- 1 cup brown sugar
- ½ cup butter room temperature
- 1 cup pecans whole halves
Caramel Layer:
- ⅔ cup butter
- ½ cup brown sugar
Topping:
- 12 ounces milk chocolate chips
Instructions
- Preheat the oven to 350 degrees. Combine the flour, brown sugar, and butter in a medium bowl. Stir together until well mixed. Pat the mixture firmly into an ungreased 13x9-inch pan. Sprinkle the pecan halves evenly over the unbaked crust layer.
- Prepare the caramel layer by combining the butter and brown sugar in a heavy saucepan. Cook over medium heat, stirring constantly, until mixture comes to a rapid boil. Continue cooking for 30 seconds to 1 minute, stirring constantly. Be careful not to let the caramel get too dark or burn. Pour the boiling mixture evenly over the pecans and crust. Bake for 18-22 minutes or until the crust is light golden brown.
- Remove from the oven and immediately sprinkle with the chocolate chips. Let the chips sit for 2-3 minutes or until softened. Spread the melted chips evenly over the surface.
- Makes 3-4 dozen.
