Tuscan Chicken Soup Recipe
Description
This recipe starts by gently cooking onions in a blend of olive oil including oil infused with sun-dried tomatoes, which imparts deep tomato flavor and complexity. Tomato paste and garlic join for richness and aroma. The base liquids include chicken broth and whole milk, creating a creamy yet light soup. Italian seasoning and garlic powder deepen the herbaceous profile.
Cooked rotisserie chicken and fresh spinach add protein and greens while small pasta such as macaroni or shells provide tender, bite-sized texture absorbing the flavorful broth. Parmesan cheese is stirred in at the end to add umami depth and a gentle, savory finish.
This soup works well as a satisfying lunch or dinner, with the sun-dried tomato oil and cheese creating layers of flavor. It is straightforward to prepare using common pantry ingredients and precooked chicken, making it convenient without sacrificing taste.
