Tuscan Garlic Skillet Chicken

A quick, easy and impressive 30 minute meal that is packed with delicious flavor! Tender and juicy chicken, sun dried tomatoes, mushrooms, fire roasted tomatoes, onions, and garlic come together to being you a meal that is sure to wow the family!

Ingredients
- 2 tablespoons olive oil, divided
- 1 pound thinly sliced chicken breasts
- salt and pepper
- ¼ cup chopped onion
- 3 garlic cloves minced
- 12 ounces sliced mushrooms
- ½ cup chopped sun-dried tomatoes
- 2 (15-ounce) cans fire-roasted tomatoes
- ¼ cup grated Parmesan cheese
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon oregano
- ¼ teaspoon thyme
- Fresh chopped basil for garnish
Instructions
- Heat 1 tablespoon of the olive oil in a large skillet over medium-high heat.
- Cook the chicken in the skillet for about 3 minutes on each side until the chicken is seared and fully cooked. Remove the chicken and set aside.
- Add the remaining 1 tablespoon olive oil to the skillet with the onion, garlic, and mushrooms, and cook until tender.
- Stir in the sun-dried tomatoes, fire-roasted tomatoes, parmesan cheese, salt, pepper, oregano, and thyme.
- Place chicken back into the skillet and cook until the sauce is bubbling. Remove from heat, add salt and pepper as needed. Garnish with chopped basil.
