Ingredients

Servings
  • 1 lb spicy Italian sausage
  • 4 garlic sliced, cloves
  • 1 onion diced, medium
  • 3 celery chopped, ribs
  • 2 (15oz) cannellini beans drained, canned
  • 1 russet potato cut into 1 inch cubes, large
  • 1/4 cup sun-dried tomatoes sliced
  • 2 tbsp capers with juice
  • 6 cups chicken broth
  • 1 (14.5oz) coconut milk full fat or milk of choice, canned
  • salt to taste, kosher salt
  • black pepper to taste, kosher salt
  • 2 baby spinach fresh, handfuls
  • 2 tbsp Italian parsley finely chopped
  • Parmesan Cheese Optional: shredded|crusty
  • bread Optional: shredded|crusty

Instructions

  1. In a large soup pot, sauté the sausage until it is no longer pink. Stir in the garlic, onion, celery, and continue to sauté, over medium heat, for 5 more minutes.
  2. Add the beans, potato, sun-dried tomatoes, capers, broth and coconut milk.
  3. Bring the soup to a boil, then reduce the heat to low and partially cover with a lid. Simmer the soup for 20-30 minutes, or until the potatoes are tender.
  4. Once the soup is ready, remove from heat. Season with salt and pepper to your taste, and while still hot add in the spinach and stir to wilt.
  5. Garnish the bowls with freshly chopped parsley and shredded parmesan, if desired.

Notes

  • Storing in the refrigerator: Once the soup has cooled, transfer it to an airtight container. It will last in your fridge for about 3-4 days.
  • To freeze: Once completely cool, place it in a freezer ziplock bag or airtight container, and label it with the date. Leave a small amount of room for it to expand as it freezes. It will be kept in the freezer for up to 3 months.
  • To reheat: Thaw overnight in the fridge. Reheat over low heat on the stovetop or in 30-second intervals in the microwave. Once you remove it, if it has separated and needs to be thickened, you can stir in some cornstarch or flour.
