Twice-Baked Chocolate Croissant
Description
The preparation begins by boiling sugar and water to dissolve the sugar, then adding vanilla extract and orange juice to create a fragrant syrup. Mini croissants are sliced lengthwise and brushed inside with this syrup to soak in moisture that will enhance softness after baking.
Dark chocolate chips are melted carefully in the microwave and mixed with Nutella to form a creamy chocolate filling. Each croissant bottom is spread with this rich filling and optionally topped with crushed nuts. The croissant tops are replaced, brushed with the syrup again, and the assembled croissants are baked at 350°F for 25 minutes. The second baking caramelizes the syrup on top, giving a glossy surface, and melts the filling into the croissants simultaneously.
After baking, the croissants can be dusted lightly with powdered sugar for a finishing touch. This technique yields a pastry that is moist inside with a sweet chocolate center and a subtly citrus-flavored glaze on the outside.
Ingredients
- 12 Croissant mini
- 1 cup water
- 1/2 cup sugar
- 1/2 tsp vanilla extract
- 1/2 cup orange juice
- 1/2 cup dark chocolate chips
- 1/3 cup Nutella
Instructions
- Preheat the oven to 350°F degrees. In a saucepan, mix together the sugar and water, bringing it to a boil. Add vanilla extract and orange juice. Remove from the heat.
- Slice the croissants in half lengthwise. Using a pastry brush, soak the insides of the croissants with syrup on both sides. Note: Croissants will look wet, but will dry out during baking.
- Melt dark chocolate chips in the microwave in 30 second intervals, stirring frequently. Once the chocolate chips are completely melted, stir in the Nutella until smooth.
- Spread a spoonful of chocolate filling into each croissant bottom (optional: sprinkle on crushed nuts). Cover with the croissant top. Use a pastry brush to spread syrup on the top of each croissant. Repeat until all the croissants are filled.
- Bake for 25 minutes. Sprinkle with powdered sugar and serve!
