Two Ingredient Lemon Bars
Description
The recipe combines a boxed angel food cake mix with canned lemon pie filling, mixed until slightly foamy to create a smooth batter. The mixture bakes in a lined 9x13 pan until the surface turns golden brown and the center no longer jiggles, producing a bar with a delicate crumb and refreshing tartness from the lemon.
The texture is light and spongy from the cake mix, while the lemon pie filling adds moisture and a pronounced citrus taste. Baking time varies by oven, but the bars generally require close to 40 minutes to fully set and develop a golden top.
Once cooled, the bars can be sliced cleanly and served on their own or with toppings like powdered sugar or whipped cream for extra sweetness and creaminess, enhancing the lemon notes.
Tips include watching baking closely at the 30-minute mark, thoroughly mixing ingredients for consistency, and allowing bars to cool fully before cutting for best results. The basic approach also allows for flavor substitutions by using other fruit pie fillings to vary the taste.
Ingredients
- 16 ounce angel food cake 1 box
- 22 ounce lemon pie filling 1 can or 1 jar of lemon spread
Instructions
- Preheat oven to 350°. Line a deep 9x13 inch baking pan with parchment paper.
- In a large bowl, empty the contents of the box of angel food cake and to it add the lemon pie filling. Whisk it until it's well incorporated, you'll notice it start to foam slightly.
- Bake for about 30 to 40 minutes. I lean more towards the 40-minute mark because at 30 minutes, I've found that it's usually not done yet. But feel free to check at 30 minutes and adjust accordingly.
Notes
- Keep a close watch on baking after 30 minutes, checking for a golden top and a set center without jiggle.
- Mix the angel food cake mix and lemon filling thoroughly to achieve a smooth, even batter.
- Allow the bars to cool completely before slicing to ensure clean cuts and proper setting.
- Consider topping with powdered sugar or whipped cream for extra flavor and presentation.
- The lemon pie filling can be substituted with other fruit fillings like cherry or blueberry to create different flavored bars.
