Tzatziki Crusted Salmon with Panko

This recipe features salmon fillets coated with a layer of tzatziki and topped with a savory panko crust mixed with Parmesan, butter, mustard powder, and honey. Baking at a high temperature creates a crispy golden topping while the salmon remains tender and moist beneath. The tzatziki adds fresh, tangy flavors, contrasting with the rich, buttery panko crust. The dish is complemented by simple roasted potatoes or a salad, offering a balanced meal with distinct textures and flavors.

Description

Tzatziki Crusted Salmon involves spreading a thin layer of tzatziki on evenly portioned salmon fillets before topping them with a mixture of panko breadcrumbs, Parmesan cheese, butter, mustard powder, and honey. The crust provides a crisp, slightly sweet, and savory topping that contrasts the tender fish. The high oven temperature ensures the topping browns nicely without overcooking the salmon.

Preparation is straightforward, requiring assembly on a baking pan sprayed with non-stick oil. While the salmon bakes for about 17 minutes, complementary side dishes like roasted potatoes—seasoned with oil, garlic powder, and pepper—can be cooked simultaneously on a separate rack, simplifying meal prep. The salmon can be served hot or enjoyed cold the next day as a convenient lunch option.

Ingredients

Servings
  • 1/2 lb salmon fillet portioned into 4 pieces
  • 5 tbsp tzatziki
  • 1/3 cup panko
  • 1/5 cup Parmesan Cheese skip if you want to cut down on calories
  • 1/5 cup butter
  • 1 tsp mustard powder
  • 1 tbsp honey

Instructions

  1. Heat your oven (my salmon's instructions states 450F)
  2. Slice up the salmon and place them on a baking pan (coated with non-sticking spray) and spread a thin layer of tzatziki on each fillet.
  3. In a small bowl, combine the panko, parmesan cheese, butter, mustard, and honey. Evenly spoon the panko mix onto the tzatziki on top of the salmon fillet.
  4. Bake for 17 minutes and either serve immediately or eat cold the next day for lunch.
  5. Optional: while the salmon is baking, you can either prep some carb or salad to go with it. I made roasted potatoes: cut up some potatoes into small pieces, coat with oil, garlic powder, and pepper then baked at the same time as the salmon on a different rack until golden brown.
