Ukrainian Cabbage Rolls

Ukrainian Cabbage Rolls consist of large cabbage leaves stuffed with a seasoned mixture of cooked rice, grated carrots, diced onion, and a blend of ground chicken and beef. The rolls are layered tightly in a ceramic pot and served with a sauce of sour cream and tomato sauce, combining creamy and tangy elements that complement the savory filling.

Description

This recipe begins by cooking rice and sautéing carrots and onions before mixing them with ground meat and seasonings to create a flavorful filling. Boiling a whole cabbage head softens leaves enough to peel them off without breaking, allowing for easy rolling.

Removing the hard spine from each leaf helps achieve a more pliable wrapper for the filling. The rolls are formed by placing a generous spoonful of filling and rolling each leaf into a compact cone shape. These are then assembled snugly in a ceramic pot in preparation for baking.

The sauce made from sour cream and tomato sauce enhances the rolls with tangy and creamy notes, adding moisture and depth. Cabbage rolls are a hearty dish that can be served as a main course, especially during colder seasons.

Cabbage Rolls

  • 1/2 lb white rice
  • 2 carrot grated, large
  • 2 onion diced, medium
  • 1 lb ground meat chicken and beef is a great combo
  • 1 tbsp salt adjust to taste
  • 1 tsp black pepper adjust to taste
  • 1 cabbage large head
  • 3 tbsp olive oil

Cabbage Rolls Sauce

  • 1 onion cut in half rings, large
  • 1 cup sour cream
  • 1/2 cup tomato sauce

Instructions

  1. Cook the rice in a pot of salted water. Sauté the grated carrots and diced onions with olive oil. Allow the rice, carrots, and onions to cool.
  2. In a large bowl, mix together the ground meat, rice, carrots, onions, salt, and pepper.
  3. Bring 1 gallon of water to a boil in a large deep pot, then add the whole cabbage head. Boil it for 2-3 minutes, then remove it and peel off the cabbage leaves until they become too small. Try to keep the leaves from breaking. Allow the leaves to cool.
  4. Cut out the hard part of the cabbage leaves by slicing each piece in half and removing the middle spine.
  5. Hold a cabbage leaf in the palm of your hand, add a heaping spoonful of the filling to the center, and roll the cabbage leaf up into a cone shape.
  6. Poke the top of the roll down into the filling. Repeat until all the cabbage leaves are used up.
  7. Preheat the oven to 375°F. Place the cabbage rolls into a ceramic pot in layers, spaced tightly together. 
  8. To make the sauce, heat a skillet on medium-high heat with a bit of oil, then add the onion rings and sauté until they are golden brown. Add the sour cream and tomato sauce to the pan and mix to combine.
  9. Pour the sauce over the cabbage rolls, then bake them for 45 minutes.
  10. Serve the cabbage rolls warm with a dollop of sour cream and fresh herbs. Enjoy!
