  • 3 cups whole rye flour
  • 1/3 cup buckwheat flour whole
  • 1 teaspoon dried yeast
  • 1/4 cup water warm
  • 1 cup coffee strong
  • 1 teaspoon blackstrap molasses optional Add molasses to The coffee.

Instructions

  1. Dissolve the dry yeast in warm water and let it stand until foamy.
  2. Mix the dry ingredients. Add 3/4 cup of the coffee and the yeast solution.

  9. Proof the dough in a warm and humid place (85 deg F.) for about 45 minutes, until the dough is soft.
  10. There will be little rise.
  11. Bake at 450F for 20 minutes, with a pan of water in the oven. Remove the water and reduce the oven heat to 375F and continue to bake for about 30 minutes. for another
