Ultimate Nacho Recipe
Description
This recipe begins by spreading a single layer of tortilla chips on a baking sheet. Ground beef is cooked until browned, seasoned with taco seasoning, then combined with refried beans warmed with a small amount of water, creating a rich meaty and creamy topping. Half of the shredded cheddar cheese is layered on the chips, followed by evenly distributed beef and bean mixture, then topped with remaining cheese.
The layered chips are baked briefly just until the cheese melts fully, maintaining chip crispness while binding the toppings. After baking, additional fresh toppings such as sour cream, guacamole, sliced olives, jalapeños, and chopped onions are added to complement the rich, melted cheese and savory beef.
This dish is suitable for serving as a shareable appetizer or casual main course. It can be prepared on a sheet pan or in other oven-safe dishes, making it flexible in presentation and portion size. The recipe notes that quantities can be adjusted or doubled to feed larger groups.
Ingredients
- 16 ounces tortilla chips
- 1 pound ground beef
- 2 tablespoons taco seasoning
- 1/4 cup water
- 1 (15 ounce can) refried beans
- 4 cups cheddar cheese divided, shredded
Additional Topping Ideas:
- 1/2 cup sour cream
- 1/2 cup guacamole
- 1/3 cup olives sliced
- 1/2 cup salsa fresh
- 1/3 cup cilantro chopped, fresh
- 1 medium jalapeño sliced, or pickled jalapenos
- 1/4 cup red onion diced
- 1/4 cup green onion sliced
Instructions
- Preheat oven to 350°F (177°C). Spread 16 ounces tortilla chips onto a 13x18-inch baking sheet.
- Heat a 12-inch skillet over medium-high heat. Add 1 pound ground beef. Use a spoon to break up the meat and cook 8 to 10 minutes until beef is fully cooked through and no longer pink. Drain any excess grease.
- Add 2 tablespoons taco seasoning, stir, and cook 60-90 seconds.
- Pour in 1/4 cup water and add 1 (15 ounce can) refried beans. Stir to combine and cook until heated through, about 2 to 3 minutes. Keep warm.
- Sprinkle half of the cheese over the chips. Dot with the beef and bean mixture. Top with the remaining half
- Bake for 5 to 7 minutes, until cheese is fully melted.
- Remove from heat and add additional toppings as desired. Serve warm.
Notes
- Use any oven-safe baking dish like a 9x13 pan or cast iron skillet for the nachos.
- This recipe scales well; prepare two pans with extra chips and cheese for larger gatherings.
- Serve immediately after adding fresh toppings for best texture and flavor balance.
