  • 1/2 cup shortening
  • 1 1/2 cups sugar
  • 2 eggs beaten until fluffy
  • 2 cups all-purpose flour
  • 1/4 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup mashed bananas
  • 1/4 cup buttermilk
  • 1 teaspoon vanilla extract

Cream Cheese Frosting

  • 4 ounces butter
  • 8 ounces cream cheese
  • 1 pound powdered sugar
  • 1 teaspoon vanilla extract

Cake Topping

  • ½ cup chopped nuts

Cake Instructions

  1. Preheat oven to 350 degrees. Grease a 9x13 inch baking pan.
  2. Cream together shortening and sugar until light and fluffy. Add eggs in, and mix well.
  3. Sift together the dry ingredients, and add this to the creamed shortening mixture.
  4. Add bananas, buttermilk, and vanilla. Beat until well mixed.
  5. Bake at 350 degrees for 30 to 35 minutes.
  6. Let the cake cool completely.

Frosting Instructions

  1. Allow the butter and cream cheese to soften at room temperature.
  2. Using an electric mixer, beat cream cheese and butter together in a large bowl until thoroughly combined and smooth.
  3. Slowly add in powdered sugar while mixing on low speed.
  4. Add vanilla extract and mix it into the frosting.
  5. Frost the cake and then sprinkle chopped nuts on top.

Notes

  • For the ultimate texture, don't rush the creaming process of shortening and sugar. The more air you incorporate during this step, the lighter and fluffier your cake will be. If you prefer a more pronounced banana flavor, you can add an extra ripe banana, but you may need to extend the baking time by 3-5 minutes to compensate for the additional moisture.
