Unbelievable No-Bake Hot Chocolate Pie Recipe

This no-bake hot chocolate pie features a crisp graham cracker crust filled with a silky chocolate truffle filling made from bittersweet chocolate, whipped cream, and vanilla. The filling includes semi-sweet chocolate chips folded in for added texture. The pie sets in chilled tart tins, balancing smooth and slightly chunky textures with rich chocolate flavors.

Description

The pie crust is made by combining melted butter with graham cracker crumbs until the mixture holds like wet sand, then pressed into tart tins and chilled to set. The filling begins with gently melted bittersweet chocolate mixed with vanilla and salt to enhance flavor. Heavy cream is whipped to soft peaks and partially folded into the chocolate to lighten it, then the remaining cream is gently incorporated to ensure a smooth mousse-like texture. Semi-sweet chocolate chips are folded in last to add pleasant bites within the creamy filling. Once assembled, the pie is refrigerated to firm up. The recipe allows for preparation up to one day in advance, with topping options like meringue to serve on the day of serving. Other cookies, such as gingernut biscuits, can be used for the crust if desired.
