Unbelievable No-Bake Hot Chocolate Pie Recipe
Description
The pie crust is made by combining melted butter with graham cracker crumbs until the mixture holds like wet sand, then pressed into tart tins and chilled to set. The filling begins with gently melted bittersweet chocolate mixed with vanilla and salt to enhance flavor. Heavy cream is whipped to soft peaks and partially folded into the chocolate to lighten it, then the remaining cream is gently incorporated to ensure a smooth mousse-like texture. Semi-sweet chocolate chips are folded in last to add pleasant bites within the creamy filling. Once assembled, the pie is refrigerated to firm up. The recipe allows for preparation up to one day in advance, with topping options like meringue to serve on the day of serving. Other cookies, such as gingernut biscuits, can be used for the crust if desired.
Ingredients
- 2 1/3 cups (7oz/198g) graham cracker crumbs
- 1 cup bittersweet chocolate chips Ghirardelli 60%, 6oz/170g
- 2 large egg white, roughly 2oz/60g
- 1/2 cup (4oz/115g) butter melted
- 2/3 cup (5floz/142ml) heavy whipping cream (35% Fat or higher)
- 1/3 cup (2.5oz/71g) sugar
- 1/4 cup (1.5oz/43g) semi-sweet chocolate chips Ghirardelli
- ⅛ teaspoon cream of tartar
- 1/2 teaspoon vanilla extract
- ⅛ teaspoon salt
Notes
- You can prepare the cookie crust and chocolate truffle filling up to a day ahead, refrigerate, and top with meringue when ready to serve.
- Any plain cookie crumbs can substitute graham crackers for the crust; crushed gingernut biscuits are a flavorful alternative.
