Unstuffed Cabbage Rolls Skillet

Ingredients

  • 1 tablespoon olive oil
  • 1 cup diced yellow onion
  • 1 teaspoon grated garlic
  • 1 pound ground turkey or chicken
  • 2 teaspoon fresh thyme leaves
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon ground cinnamon
  • 14.5 ounce can diced tomatoes
  • 8 ounce can tomato sauce
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon maple syrup
  • 1/2 head chopped green cabbage, about 5 cups
  • 1 tablespoon chopped flat leaf parsley
  • 1 1/2 cups cooked brown rice

Instructions

  1. Heat the olive oil in a large skillet or pot over medium-high heat. When hot, swirl to coat the bottom and add in the ground turkey, diced onion, salt and pepper. Sauté until the onion is tender and the turkey is nearly cooked through.
  2. Add in the garlic and spices and sauté for another minute. Pour in the diced tomatoes, tomato sauce, apple cider vinegar, maple syrup and brown rice. Stir everything together and then add in the chopped cabbage.
  3. Cover the skillet or pot with a lid and let the cabbage cook down for a few minutes and then stir it in with everything else. Cook with the lid on for 15 minutes on medium-low heat stirring occasionally.
  4. Stir in the chopped parsley, taste for seasoning, and serve.
