Ingredients
- 2 butter beans or fava beans, drained and rinsed, 14.5 ounce cans
- 1 cup cherry tomato halved
- 3/4 cup yellow onion finely chopped
- 1/4 cup parsley flat-leaf, chopped
- 3 Tablespoons red wine vinegar
- 2 Tablespoons extra virgin olive oil
- 1 teaspoon oregano dried
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon black pepper freshly ground
- 1/4 teaspoon salt
Instructions
- Toss the beans, tomatoes, onion, and parsley together in a large bowl.
- In a small bowl, whisk together the vinegar, oil, oregano, cayenne, pepper, and salt. Pour over the bean mixture and toss well to coat.
- Let rest at room temperature for one hour before serving. Refrigerate leftovers.
