Valentine's Day Cookies
Description
This cookie recipe creates a traditional sugar cookie dough by combining all-purpose flour with baking powder and salt, then creaming softened, unsalted butter with sugar until fluffy. Adding an egg and vanilla extract enriches the dough, which is mixed until it forms a cohesive, pliable texture. After refrigeration for at least two hours, the dough is rolled out to a quarter-inch thickness and cut into festive shapes. Baking at 375°F for 8-10 minutes yields cookies with slightly crisp edges and soft centers. The recipe notes that using clear vanilla or almond extract can change the flavor profile. Avoid greasing the cookie sheet to maintain the cookies' shape, and chilling ensures easy handling and better texture. These cookies are ideal for decorating or gifting for Valentine's Day.
Ingredients
- 3 cups all-purpose flour
- 1 ¼ teaspoons baking powder
- ¼ teaspoon salt
- 1 cup butter softened to room temperature, unsalted
- 1 cup granulated sugar
- 1 large egg room temperature
- 2 teaspoons vanilla extract
Instructions
- In a bowl, combine dry ingredients and set aside.
- With a stand mixer with a paddle attachment (or a hand mixer), combine butter and sugar until fluffy, about 3-4 minutes.
- Add the egg and vanilla and mix until well combined and smooth.
- Add flour mixture a little bit at a time with the mixer on low until mixed and the flour is incorporated. Continue mixing until the dough holds together, about 5 minutes. (If the dough seems floury or powdery, it need to continue to mix together).
- Divide the dough in half and flatten each half into a disk. Wrap with plastic wrap and place in the refrigerator for at least 2 hours.
- Preheat the oven to 375°F. While the oven is preheating, remove the dough from the fridge.
- Sprinkle the worksurface with a bit of powdered sugar or flour so the dough doesn't stick. Roll dough to ¼" thickness and cut into desired shapes.
- Place cookies 1-inch apart on an ungreased cookie sheet and bake for 8-10 minutes or until cookies begin to brown on the edges.
- Cool completely before decorating with icing.
Notes
- Use clear vanilla or almond extract to vary flavor as desired.
- Ensure butter and egg are at room temperature for proper mixing and texture.
- Beat butter and sugar thoroughly until fluffy; if dough appears powdery, continue mixing until smooth.
- Refrigerate dough at least two hours before rolling out; let it warm slightly to room temperature before baking.
- Do not grease the baking sheet to help cookies keep their shape during baking.
- Roll and cut dough into shapes suited for the occasion, such as hearts for Valentine's Day.
