Vanilla & Brown Sugar Breakfast Polenta
Description
Vanilla & Brown Sugar Breakfast Polenta is made by soaking cornmeal in cold water, then slowly adding it to a simmering mixture of milk, water, and salt. The combination is gently cooked over low heat until thickened to a soft, creamy consistency. Brown sugar and vanilla extract are stirred in toward the end for sweetness and aromatic flavor.
The final dish offers a smooth, comforting texture typical of well-cooked polenta, with subtle sweetness from brown sugar balanced by the warm notes of vanilla. It can be served warm in bowls, sometimes topped with additional milk or brown sugar for extra creaminess and sweetness.
This breakfast polenta serves as a warm, hearty start to the day, providing gentle sweetness without heavy ingredients. It is versatile and can be adapted with cinnamon or other spices if desired, based on personal taste.
The original notes mention that nutritional values are provided per serving. Adjust the cooking time depending on the cornmeal coarseness to achieve desired thickness.
Ingredients
- 1 cup cornmeal
- 3 cups water divided, cold
- 2 cups milk whole
- ¾ teaspoon salt
- ⅓ cup brown sugar
- 1 teaspoon vanilla extract
Instructions
- Put the cornmeal in a small bowl. Top with 1 cup cold water and stir. Set aside.
- In a medium saucepan add the remaining 2 cups cold water and 2 cups whole milk. Bring to a low boil. Add salt and stir. Slowly add the cornmeal and water mixture, using a whisk to stir out any possible lumps.
- Once all of the cornmeal is added, turn the flame to low and simmer, stirring frequently, until the polenta has thickened. Depending on the coarseness of your meal, it may take 10-40 minutes. Once thickened, add sugar and vanilla extract. Sprinkle cinnamon in if you life.
- Place polenta in small bowls and top with milk and a sprinkle of additional brown sugar if you like.
Notes
- Adjust cooking time based on cornmeal coarseness; thicker polenta requires longer simmering.
- Serve with additional milk or brown sugar if preferred for extra creaminess or sweetness.
