Description

The final mixture is whipped at medium-high speed until light and fluffy, resulting in a smooth, spreadable frosting. While a stand mixer speeds up preparation, a hand mixer can be used too.

Adjust quantities to scale frosting for different batch sizes, and consider doubling the recipe for larger cakes or to have extra for filling.   • 1 cup butter at room temperature, unsalted
  • cups powdered sugar sifted
  • Pinch salt
  • 1 tablespoon vanilla extract

Instructions

  1. Using the whisk attachment of your stand mixer, whip the butter on medium-high speed for 5 minutes, stopping to scrape the bowl once or twice.
  2. Reduce the speed to low and gradually add the powdered sugar. Once all of the powdered sugar is incorporated, increase the speed to medium-high and add the vanilla, mixing until incorporated. Whip at medium-high speed until light and fluffy, about 2 minutes, scraping the bowl as needed. Frost cake or cupcakes as desired. 

Notes

  • This recipe yields enough frosting for 12 cupcakes or a 9x13-inch cake; double the amount for larger quantities.
  • A stand mixer with a whisk attachment is ideal, but a hand mixer works as well.
  • Vanilla bean paste or vanilla bean seeds can substitute for vanilla extract without altering texture.
  • Use gel food coloring to tint the frosting without thinning it.
