Vanilla Cinnamon Caramels are rich, buttery candies cooked to a deep golden color and infused with vanilla and cinnamon spices. The combination of butter, sugar, corn syrup, and sweetened condensed milk creates a creamy, smooth caramel that sets to soft squares. The cinnamon adds a subtle warmth, making these caramels a fragrant and sweet treat that can be stored at room temperature for up to two weeks.

Description

These Vanilla Cinnamon Caramels start by melting butter with granulated sugar, then adding light corn syrup and sweetened condensed milk. The mixture is brought to a rapid boil over medium-high heat, then cooked with continuous stirring until it reaches a deep golden color, which indicates proper caramelization.

At this point, ground cinnamon and vanilla extract are stirred in to infuse the caramel with warm spice and aromatic vanilla flavor. The hot caramel is then poured into a greased and foil-lined 8x8 inch pan to cool and set. Once firm, the caramel is cut into squares and wrapped individually to maintain freshness.

If the mixture begins to separate with butter pooling on top, brisk whisking off heat reunites the ingredients before returning to heat to continue cooking. Cooling can be expedited in the refrigerator or done at room temperature. The caramels keep well at room temperature for about two weeks.

  • 1 ½ ticks butter (12 tablespoons)
  • ½ cup granulated sugar
  • 3 tablespoons light corn syrup
  • 1 ounce can sweetened condensed milk
  • ½ teaspoon vanilla extract
  • ¼ teaspoon cinnamon

Instructions

  1. In a medium sauce pan melt 1 1/2 sticks of butter with 1/2 cup sugar. Add corn syrup and condensed milk. (Continue to stir throughout the entire process) Bring to a rapid boil over medium-high heat, and then decrease to medium heat (should still be bubbling) 6-8 minutes or until mixture achieves deep golden color, stirring constantly. (I recommend a whisk! - see note) Once golden color is reached, remove from heat and stir in cinnamon and vanilla.
  2. Pour into a greased, foil-lined 8x8 inch pan and allow to cool. (You can place it in the fridge to speed up the cooling process or allow to cool at room temperature.) Cut into squares and wrap in wax paper. Store at room temperature up to 2 weeks.

Notes

  • If the caramel mixture separates, remove from heat and whisk vigorously until smooth before continuing to cook.
  • Use a whisk to stir constantly during cooking to prevent burning or sticking.
  • Cooling time is not included in the prep time; allow the caramel to fully set before cutting.
