Vanilla Pudding Fruit Salad
Description
The salad features a mix of fresh and canned fruits including sliced strawberries, peaches, mandarin oranges, pineapple chunks, bananas, diced Granny Smith apple, blueberries, and purple grapes. Lime zest adds brightness. One can of peach juice is combined with instant vanilla pudding mix to create a mildly sweet and smooth dressing that coats the fruit. The other canned fruits are drained to prevent excess liquid.
Once mixed, the fruit salad is chilled for at least 30 minutes, allowing the pudding to set and the flavors to meld. This results in a creamy fruit salad with a pleasant balance of sweet and tart, where the pudding provides a soft texture that complements the varied fruit pieces.
The fruit salad works well as a side dish or light dessert, especially ideal for warm weather or gatherings.
Ingredients
- 2 cups strawberries sliced
- 30.5 ounces peach 2 cans, sliced
- 11 ounces mandarin orange 1 can
- 15 ounces pineapple chunks 1 can
- 2 banana sliced
- 1 apple cored and diced, Granny Smith
- 1 ½ cups blueberries
- 1 ½ cups purple grapes
- 1 lime
- 2 tablespoons instant vanilla pudding mix
Instructions
- Zest the lime.
- Drain one of the cans of peaches into a large bowl. Stir 2 tablespoons pudding mix into the juice.
- Drain remaining can of peaches, mandarin oranges and pineapple chunks. (Juice is not needed for this recipe).
- Add all fruit and lime zest to the pudding mixture. Gently stir to combine.
- Chill at least 30 minutes before serving.
