Vanilla Pudding Recipe
Description
Vanilla Pudding Recipe uses granulated sugar and cornstarch combined with milk and egg yolks as the base. The mixture is cooked over medium heat with constant stirring until it comes to a boil and thickens to a custard-like consistency. Butter and pure vanilla extract are whisked in off the heat to enhance the pudding’s richness and smoothness. The final product can be enjoyed warm or refrigerated to chill.
The texture is creamy and thick enough to stand on its own but still soft and smooth. The flavor is a straightforward, gentle vanilla profile without additional spices or flavorings. This makes it versatile for serving plain or using as a base for other desserts or toppings.
This pudding can be made a day ahead and covered with plastic wrap directly on the surface to prevent a skin forming. It will keep in the refrigerator for up to three days. While freezing the pudding is not recommended to maintain texture, it can be used in popsicle molds to create frozen pudding treats.
Ingredients
- ⅓ cup granulated sugar
- 3 tablespoons cornstarch
- 2¼ cups milk or higher, 2%
- 2 egg large yolks
- 1 tablespoon butter salted
- 2 teaspoons vanilla extract pure
Instructions
- In a medium bowl, sift together sugar and cornstarch. Whisk in cold milk and egg yolks and mix to combine.
- Pour this mixture into a medium saucepan over medium heat, stirring constantly until the mixture reaches a boil. Continue stirring and let boil for 1 minute.
- Remove pan from heat and whisk in butter and vanilla until butter is melted.
- Stirring occasionally, let the mixture cool, and serve warm or chilled.
Notes
- Prepare the pudding up to one day in advance and cover tightly with plastic wrap pressed onto the surface to prevent skin formation.
- Store leftovers in an airtight container in the refrigerator for up to three days.
- Freezing the pudding is not advised as it does not thaw well; instead, use the pudding to make frozen treats using popsicle molds.
