Perfect for breakfast or snacking, these delicate and soft Vanilla Tea Muffins are made with black tea giving it a beautiful & aromatic flavor

Ingredients
- 2 1/4 cups all purpose flour
- 1 Lipton Tea Bag
- 3/4 cup Swerve sweetener
- 1/2 teaspoon salt
- 1 tablespoon baking powder
- 2 eggs
- 2 teaspoons pure vanilla extract
- 1 tick butter melted
- 1 cup 2% milk
- 1 1/2 tablespoons vinegar
Instructions
- Preheat oven to 400 degrees F.
- Line muffin tin with paper liners
- Mix the milk with the vinegar and let it sit for 5 minutes (this is make low-fat buttermilk)
- Sift the contents of the tea bag, flour, salt and baking powder together. Pour dry ingredients into a bowl and mix in the Swerve Sweetener
- In another bowl, whisk the buttermilk, eggs, and cooled melted butter
- Mix in the wet ingredients into the dry. Mix with a whisk until just combined. Do not overmix
- Pour batter into muffin tins filling them 3/4 of the way.
- Bake for 17-18 minutes or until browned on top.
