Vanilla Wacky Cake
Description
Vanilla Wacky Cake is made by combining dry ingredients with separate wells for vanilla, oil, and vinegar, then mixing them with water to form a batter that rises without eggs. The batter is poured into a greased 9×9 inch pan and baked until a toothpick comes out clean, producing a moist crumb with a tender texture. After baking and cooling, the cake is topped with a cream cheese frosting blended from softened cream cheese, vanilla, and powdered sugar, spread evenly for a creamy finish. This method allows a rich vanilla dessert without traditional dairy or eggs in the cake itself.
The flavor is mild and sweet, with the tang of vinegar balanced by vanilla extract and sweetness from the powdered sugar in the frosting. The cream cheese frosting adds a creamy texture that complements the cake’s moist base. Baking in a square pan gives it an even shape suitable for slices or squares.
This cake can be served as a simple dessert or snack and pairs well with tea or coffee. It’s a versatile vanilla cake option that can be made without eggs and dairy in the batter, relying on pantry staples and a straightforward process.
Ingredients
Cake
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon vinegar
- 5 tablespoons canola oil
- 1 cup water
- 1 1/2 teaspoon vanilla extract
Cream Cheese Frosting
- 8 ounces cream cheese room temperature
- 1 teaspoon vanilla extract
- 3 cups powdered sugar
Instructions
Cake
- Preheat oven to 350 degrees and grease a 9×9 inch baking pan with nonstick baking spray.
- In a large bowl, add in the flour, sugar, baking soda, and salt. Whisk until combined.
- Make 3 wells in the dry ingredients.
- Pour the vanilla in one of the wells, oil in another, and vinegar in the remaining well.
- Pour the water over all ingredients and whisk until combined
- Pour batter into the prepared baking pan.
- Place in the oven and bake for 35 minutes or until done. Insert a toothpick in the center of the cake and if it comes out clean or with moist crumbs, it’s done. Bake longer if it still has batter on it.
- Once done, allow to cool completely
Cream Cheese Frosting
- In a large bowl, add in the cream cheese. Beat with a hand mixer on medium until smooth.
- Add in the vanilla and powdered sugar. Continue to beat until the powdered sugar is worked into the frosting and the frosting is creamy.
- Spread with an offset spatula onto the cooled cake.
