Ingredients
- 1 ¾ cups all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- ⅓ cup water
- 2 tbsp ground flaxseed
- 1 1/2 cups mashed bananas
- ½ cup brown sugar or granulated sugar
- 1/3 cup melted coconut oil or avocado oil or oil of choice
- 1 tsp vanilla extract
- 1 cup chocolate chips (vegan-friendly chocolate chips, nuts, or add-ins fo choice, optional)
Instructions
- Preheat oven to 350F. Lightly grease an 8x5 loaf pan and set aside.
- In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
- In a separate large bowl, whisk the flaxseeds in ⅓ cup of water and allow to rest for 5 minutes. Once the mixture has thickened, add the mashed bananas (or mash the bananas into the flax mixture), brown sugar, oil, and vanilla to the same bowl and whisk to combine.
- Gently fold the dry ingredients into the wet batter along with your add-ins of choice.
- Pour the batter into the prepared loaf pan and bake for 45 minutes. Allow to cool for 10 minutes then transfer to a wire rack to finish cooling. Slice and enjoy!
