Ingredients
- 2 cups soy curls aka soya chunks, 100g
- 15 ounce chopped tomatoes 400g, canned
- 4 cups vegetable stock 1 litre
- 2 onion diced
- 2 carrot diced
- 2 celery diced, stalks
- 3 cloves garlic minced
- ¼ cup green lentils 50g) or brown or red lentils, rinsed, dried
- 3 tablespoons soy sauce
- 3 tablespoons tomato puree
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon sugar
- ½ teaspoon black pepper
Instructions
- Rinse the soya chunks (soy curls) under running water, then soak them in a bowl of boiled water for 15 minutes, stirring them occasionally if they float. This helps to reduce the total cooking time. Drain.
- Add the drained soy pieces and all other ingredients to a slow cooker, and stir well. Put on the lid and cook on LOW for 7 hours or HIGH for 4 hours.
- Serve over rice, mashed potatoes or on its own.
