  • 2 cups soy curls aka soya chunks, 100g
  • 15 ounce chopped tomatoes 400g, canned
  • 4 cups vegetable stock 1 litre
  • 2 onion diced
  • 2 carrot diced
  • 2 celery diced, stalks
  • 3 cloves garlic minced
  • ¼ cup green lentils 50g) or brown or red lentils, rinsed, dried
  • 3 tablespoons soy sauce
  • 3 tablespoons tomato puree
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon sugar
  • ½ teaspoon black pepper

Instructions

  1. Rinse the soya chunks (soy curls) under running water, then soak them in a bowl of boiled water for 15 minutes, stirring them occasionally if they float. This helps to reduce the total cooking time. Drain.
  2. Add the drained soy pieces and all other ingredients to a slow cooker, and stir well. Put on the lid and cook on LOW for 7 hours or HIGH for 4 hours.
  3. Serve over rice, mashed potatoes or on its own.
